Shakshuka: A simple dish that surprises you

Ingredients
  • 2 tbsp olive oil
  • 1 large red onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp chili flakes (optional)
  • 1 can chopped tomatoes (400g can or 4 ripe tomatoes)
  • Salt and pepper, to taste
  • 4 large eggs
  • 1/4 cup fresh cilantro, chopped
Instructions

    Heat olive oil in a skillet over medium heat. Add red onion and sauté until soft.

    Stir in garlic, cumin, paprika, and chili flakes. Cook for 1 minute.

    Add tomatoes, salt, and pepper. Simmer for 10-15 minutes until thickened.

    Make 4 wells in the sauce and crack an egg into each. Cover and cook until eggs are just set.

    Sprinkle with cilantro and serve with bread.
