Ingredients
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 celery stalks, sliced
  • 2 cups butternut squash, diced
  • 1/4 cup tomato paste
  • 11/2 cup Great Northern beans, boiled with salt until tender, drained
  • 1 cup orzo pasta
  • 4–6 cups vegetable stock or water
  • 2 cups kale leaves, chopped
  • 1 tsp rosemary (fresh or dried)
  • 1 tsp oregano
  • 1 tsp basil
  • Salt and black pepper, to taste

    Heat olive oil in a large pot over medium heat. Add onion and sauté until soft.

    Add garlic and cook for 30 seconds.

    Stir in celery and butternut squash; cook for 3–4 minutes.

    Stir in rosemary, oregano, and basil.

    Add tomato paste and orzo, cook until slightly darkened.

    Add beans and vegetable stock; bring to a simmer for 9 to 10 minutes, until orzo is tender.

    Add Kale leaves and cook for another 2-3 minutes
