A Welsh-Inspired Lamb Stew

Ingredients
  • 2 lbs lamb shoulder or neck (cut into chunks)
  • 2 tbsp olive oil
  • 1 large onion (chopped)
  • 4 celery stalks (chopped)
  • 2 carrots (sliced)
  • 2 turnips (diced)
  • 3–4 potatoes (chunked)
  • 6–8 cups water or light stock
  • Salt and black pepper (to taste)
  • Fresh parsley (chopped for garnish)
Method (Traditional One-Pot)

    Heat olive oil in a heavy pot over medium heat. Brown the lamb on all sides.
